So thanks to Pam for introducing me to this recipe! I don’t remember my life before it! I knew I was in love when I asked for a “to go” plate from the baby shower. Moroccan Tagine

Hey Lauren, I was in the mood for something exotic tonight and went for it with this Moroccan Tagine, lol. This African stew was amazing and very healthy with the butternut squash, tomatoes, and chickpeas. It’s so different – I’ve only worked with butternut squash in one other recipe and I’ve never worked with coriander before and love it! Lime Chicken Soft Tacos

Hey Lauren, In the spirit of the new year I thought it was time to lighten things up a little. I love these soft tacos filled with chicken sauteed in red wine vinegar, garlic, onion, and lime juice. To keep them a bit on the healthy side, I topped them with light sour cream and light Mexican cheese. Red Velvet Cupcakes

Hey Lauren, I made these cupcakes for Jessica’s birthday, my bud that crocheted the blanket for Vera, and they turned out perfect. They were an attempt to redeem myself from the red velvet cake disaster of 2008 lol. Lucy and I attempted a red velvet cake for Jeannie’s birthday years ago – I dumped the cakes out of the pan before they were cool, so they fell apart, I didn’t know the art of a crumb layer so... (more...)
