Lime Chicken Soft Tacos Recipe

Hey Lauren,

In the spirit of the new year I thought it was time to lighten things up a little. I love these soft tacos filled with chicken sauteed in red wine vinegar, garlic, onion, and lime juice. To keep them a bit on the healthy side, I topped them with light sour cream and light Mexican cheese. The original recipe called for oregano which I replaced with cilantro because, as you already know, I am addicted to cilantro and it mixed perfectly with the lime. They’re also very easy – it’s a one skillet recipe with only two steps.


Lime Chicken Soft Tacos

  • 3 medium skinless, boneless chicken breast meat – thin sliced
  • 1/4 cup red wine vinegar
  • 1 lime, juiced
  • 2 teaspoon white sugar
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 4 green onions, chopped
  • 2 cloves garlic, minced
  • 2 teaspoon fresh cilantro chopped
  • 10 (6 inch) flour tortillas
  • 1 tomato, diced
  • 1/4 cup shredded lettuce
  • 1/4 cup shredded Monterey Jack cheese
  • 1/4 cup salsa
  • 1/4 cup sour cream


  1. Lime Chicken Soft Tacos Recipe

    Saute chicken in a medium saucepan over medium high heat for about 20 minutes. Add vinegar, lime juice, sugar, salt, pepper, green onion, garlic and cilantro. Simmer for an extra 10 minutes.

    Heat an iron skillet over medium heat. Place a tortilla in the pan, warm, and turn over to heat the other side. Repeat with remaining tortillas. Serve lime chicken mixture in warm tortillas topped with tomato, lettuce, cheese and salsa.

    the combo is amazing. the original recipe called for oregano, which seemed weird, so i replaced it with cilantro (my addiction) which was perfect with the lime. thanks for the comment :)
