Christmas Inspired Pesto and Sun Dried Tomato Dip

Christmas PestoSunDriedTomato Dip Appetizer

Hey Lauren,

I was invited to a Christmas party this weekend so instead of bringing over an everyday appetizer, I wanted to make something that was inspired by Christmas colors. The layers of green pesto and sun dried tomato spread are so festive, and both flavors are toned down by the layer of garlic and shallot cream cheese. It was a big hit at the party! Mom was looking for an appetizer recipe for her neighborhood holiday party, so I’ll share this with her. How was your Mommy Group get-together yesterday?   • 1/4 cup feta cheese, crumbled
  • 2 (8 ounce) packages cream cheese, softened
  • 1 1/2 teaspoons garlic, minced
  • 1 tablespoon shallot, minced
  • 3 tablespoons vodka
  • 1/2 cup pine nuts, toasted
  • 1/2 cup sun-dried tomato spread
  • 3/4 cup pesto sauce, oil drained

    In a food processor, combine the feta cheese, cream cheese, garlic, shallot, and vodka. Process until smooth.

    Oil a medium bowl, or gelatin mold, and line with plastic wrap for easy removal. Layer the dip into the mold as follows: 1/2 of the pine nuts, sun-dried tomato spread, 1/2 of the pesto, cheese mixture, topped with remaining pesto. Pat down into the mold, and refrigerate for at least one hour.

    Turn the dip out onto a serving plate, remove plastic wrap, and cover with a few more pine nuts. Serve with crackers.

    Shortly after my ‘sister-in-law’ went to a party that had a pesto and sun-dried tomato dip, you posted this recipe. I wonder if it’s the same thing! I’ve been meaning to comment about it.

    Either way, I absolutely cannot wait to try it.

    wow, maybe it is. :) i altered mine slightly because the original recipe was soooooo strong! good to hear from you!
