More Than Chocolate Pudding!

Hello Dear Sister,

This is one of my all time favorite recipes to make. It’s dangerous because I always have all the ingredients in my house so even if I’m dieting and clean out all my goodies, I can still whip this up in no time! It’s so outrageously yummy and I just can’t get enough! It’s one of those things that seems to feed the soul. You HAVE to try it. You probably already have everything to make it! IT’S SO MUCH MORE THAN CHOCOLATE PUDDING!

More Than Chocolate Pudding!

Ingredients

  • 1 cup whit sugar (I prefer baker’s sugar, it’s finer)
  • 1/4 cup & 2T unsweetened cocoa powder
  • 1/2 cup cornstarch
  • 1/4t salt
  • 5 1/2 cups milk
  • 1/4 cup margarine or butter
  • 1T vanilla extract
  • 2t instant espresso powder (optional)
  • dash of cinnamon (optional)
  • 2T whipping cream
  • 1/4 cup semisweet chocolate chips

Directions

  1. Like I said, all simple ingredients that you probably have at home!

  2. Place a sifter over a medium saucepan on medium heat and sift in all the dry ingredients (sugar, cornstarch, salt, and cocoa powder as well as cinnamon and instant espresso powder if you choose to use them). I like the espresso powder and cinnamon because I think it makes it seem like a little bit more of a “special occasion” dessert and they bring out the flavor of the chocolate. Just don’t use too much of either because the cinnamon can make it taste too spiced like a holiday dessert and the espresso can easily overpower the chocolate. Set your sifter aside into a medium mixing bowl when done with this step.

  3. Whisk in about half the milk until the dry ingredients dissolved and are no longer seperated and floating on the top.

  4. Whisk in the rest of the milk. The top of the mixture will appear to be “foamy” but will smooth out as it cooks.

  5. The original recipe says to bring the mixture to a boil, but I can never tell if it’s boiling because I’m supposed to stir constantly. Besides, once my mixture gets to that temp, it’s so thick that it doesn’t really boil. So I just keep whisking the mixture frequently for about 20 minutes on just above medium heat (a “7″ on my stove top dial) making sure to keep scraping the bottom with my whisk so it doesn’t burn to the pot. The longer the mixture has been cooking, the more frequently you’ll need to stir it. So once you get to the last five minutes I would begin to stir constantly. Make sure that the mixture is thick enough to coat the back of a metal spoon and that when you hold the spoon sideways you can clean a line down the middle and it doesn’t drip through the line.

  6. Pour the mixture through the strainer/ sifter into the medium mixing bowl to remove any lumps.

  7. Add butter, chocolate chips, vanilla, and cream and whisk in until chocolate chips are melted. The reason you want to add these after the pudding is cooked is so that the vanilla flavor doesn’t cook off and so that the whipping cream doesn’t curdle, also so that the chocolate chips don’t burn to the bottom of the pot.

  8. Serve warm or refrigerate until cool. Top with some homemade whipped cream, and dust with a little cocoa powder, hop in your most comfy PJ’s and dig in!

    Great! Now I want pudding ;) I always say everything tastes better with sugar and butter, but when you add chocolate….yum!

    You should definitely try this recipe. It’s so smooth, yummy, gooey and comforting. I usually have a serving of it while it’s still warm because I can never wait for it to chill and I can’t describe how amazing it is. I think that it’s my favorite dessert, and coming from someone who orders dessert when I go to lunch with my friends, that says a lot. Let me know what you think when you try it.
